Ingredients:

  • 8 oz elbow macaroni
  • 2 Tbsp salted butter
  • 1/4 tsp paprika
  • Salt, pepper, and onion powder to taste
  • 2 Tbsp flour
  • 1/2 cup whole milk
  • 8 oz sharp cheddar cheese, shredded
  • Chopped chives for garnish

Instructions:

Step 1: Prep Your Equipment Start by spraying a nonstick mini muffin pan with cooking spray to ensure easy removal of your Mac and Cheese Bites. Preheat your oven to 400 degrees Fahrenheit.

Step 2: Cook the Pasta Bring a pot of salted water to a boil. Once boiling, add the elbow macaroni and cook for 2 minutes less than the package directions indicate. This ensures the pasta is slightly undercooked, so it won't turn mushy after baking. Drain the pasta and set aside.

Step 3: Make the Cheese Sauce Return the empty pot to the heat and reduce to medium. Melt the butter in the pot with the paprika, onion powder, salt, and pepper. Stir in the flour, cooking for about 2 minutes to eliminate the raw flour taste. Gradually whisk in the milk, ensuring there are no lumps. The mixture will be thick, that is how it is supposed to be.

Step 4: Combine Cheese and Pasta Turn off the heat and add the shredded cheddar cheese and cooked noodles to the pot, stirring until it melts into a smooth sauce and every piece of macaroni is coated with the cheesy goodness.

Step 5: Portion and Pack Using a cookie scoop or spoon, portion the mac and cheese mixture into the prepared mini muffin cups. Pack the mixture well into each cup using the back of the spoon to ensure they hold together once baked.

Step 6: Bake Place the muffin pan in the preheated oven and bake for 15 minutes, or until the mac and cheese bites are bubbling and the tops are slightly golden.

Step 7: Cool and Serve Remove the pan from the oven and allow the bites to cool. This step is crucial; trying to remove them while they’re too hot will cause them to fall apart. Once cooled to a warm temperature, carefully remove the bites from the muffin tin. Garnish with chopped chives for a touch of color and flavor.
